Vegan gluten-free black bean burgers? Or something?
Don’t remember exactly what I used for these now, but there was a can of black beans (which I mashed with a fork), some pre-chopped green bell peppers and onions (I don’t know why my family doesn’t just buy these things fresh, srsly), some water, and rolled oats to thicken the stuff. There weren’t any vegan breadcrumbs here and I considered crushing some of the crackers they had, but then I kind of wanted to give myself a vegan GF challenge. Since I use rolled oats in the TVP breakfast sausages I sometimes make I figured it would make sense here too. I also added minced garlic, chili powder, oregano, ginger, salt and black pepper, and hot sauce to taste. I think soy sauce and mustard probably would have been excellent additions as well.
Procedure was pretty much: mash beans, add spices/water/peppers/onions, add rolled oats until consistency thickens enough that burger-shapes can be formed from the mixture and still kind of stay together (this took a while to find). Then cook in an oil of your choice in a frying pan over medium heat. My first two kind of fell apart but it evened out by the end; I ended up with six patties. I also found they stayed together a lot better when I refrigerated them, too. Awesome with barbecue sauce and/or mustard and/or hot sauce.
